90 seconds is all it takes.
Sift softly
Add 1–2 teaspoons of matcha into your bowl. Sifting removes clumps and lets the flavour open up smoothly.
Pour with care
Add a little hot water. Not boiling. Around 80°C is ideal, warm enough to wake the matcha, gentle enough to avoid bitterness.
Whisk till it wakes
Move the chasen in a quick M or W motion for 15–20 seconds, until a soft layer of foam forms on top.
Sip. Slow down.
Hold the bowl with both hands. Take a moment. This is not multitasking tea. This is your pause.
